Wendell’s is a fine dining experience restaurant located at the bottom of the grand staircase in the main foyer of the Inn Of The Mountain Gods Resort and Casino. Views of the mountain, resort grounds and golf course are nothing short of spectacular from every table. |

The service is excellent and the menu extraordinary, with dishes like Venison, Elk, Kobe beef, fresh Halibut, PEI Oysters and so much more. To equal the menu is the expansive wine list at Wendell’s. It’s obvious to any diner that the Inn understands the definition of fine dining, and to share this knowledge, they host a monthly Wine Paring dinner. This event, put together by manager Rudy Polderman matches fine wines from a different label each month with specially prepared dishes selected and created by Chefs Starson Roy and Don Nason. |

All of the sauces and seasonings are chosen to match the selected wines. Great care is taken to ensure that the evening is both elegant and informative. The night before, the Chefs try all of the combinations to test the quality and compatibility of the parings. Everything from hors d’ oeuvres to desserts are carefully planned. |

As an example of what you can expect at a wine paring at the Inn you may find a Dry Lands Sauvignon Blanc matched with trout roulades, prosciutto cheese and persimmon and a California Meritage complementing a demi-glaze blackberry Pheasant with peach brulee. To say the least, this is not an ordinary evening at Wendell’s and it is not at all like ordering from the menu. Here you will taste many different dishes with an equal number of wines so the portions are smaller to allow one to fully enjoy the experience. However, by evening's end you will be very satisfied and even the most experienced wine aficionados among us will come away with something new to consider when perusing a wine list.
